Mother’s day is approaching… A wonderful way to celebrate is to enjoy your mother’s company and nurture her body with delicious nutritious choices.
If you take her out, choose a place with a variety of healthy dishes, a place where the menu contains organic and sustainable ingredients if possible. Or instead of going out and be caught up in the crowds, and sometimes hectic environments, maybe you can cook a clean wholesome meal for her!
If you are a mom, nothing better to give yourself than the consumption of nutritionally-dense foods.
The following dishes are pretty straight forward and super healthy:
Sweet Potato Rounds with Feta Cheese
Preheat your oven to 500”F
In a bowl combine the olive oil, Himalayan salt and paprika.
Cut the sweet potatoes into 1 inch thick rounds.
Take each sweet potato round and coat it in the olive oil mixture.
Place the potatoes and space them on a baking tray.
Bake the sweet potato rounds for 8 to 10 minutes on each side until golden.
Transfer to a serving tray and top with the goat cheese, candied walnuts, and pomegranate seeds. Sprinkle raw honey on top.
Mango Avocado Salad
- 1 organic tomato, cubed
In a large serving bowl, whisk together lime juice, salt and pepper to taste. Slowly whisk in oil. Toss in mangoes, avocado, tomato, and red onion to coat. Serve immediately.
- 1 tbsp organic garlic
Preheat the oven to 450 degrees F. Season salmon with salt, pepper, and garlic. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan. Bake until salmon is cooked through, about 12 to 15 minutes.
Besides nutritious foods, give moms out there the opportunity to get healthier – Not more STUFF! Provide gift cards to health, fitness, and wellness services and/or items, such as gift cards to personal training services, fitness and yoga classes, massages, cardio and resistance training equipment, or anything else that will add healthy years to their lives.
To all the MOMS out there: HAPPY MOTHER’S DAY!!!
